This field blend of gesha and an Ethiopian landrace variety, produced on the San Pablo plot that Roger manages with his son Jose, is a fascinating exploration of plant genetics - presented through the lens of meticulously executed honey processing. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eMany of the microlots produced at Santa Teresa are honey processed, as is common throughout Costa Rica. In contrast to a wet processed coffee, where some combination of fermentation and washing is employed to break down and ultimately remove the sugary mucilage that remains on the surface of coffee seeds after the fruit has been removed, honey processed coffee is dried immediately after pulping, with some amount of the mucilage left to dry on the coffee seeds. Skilled producers like Roger are able to carefully set up their pulping machines to leave more or less mucilage on the coffee prior to drying. A “white honey” indicates that almost all of the mucilage has been scraped off prior to drying, while a “red honey” or “black honey” would indicate that more mucilage was left on the seeds - which oxidizes to a darker hue during the drying process. This gesha-Ethiopia field blend is described by the producer as a “yellow honey”. This AA screen-size lot comes from coffees harvested at multiple family-owned farms that are located in close proximity to the Kii wet mill, or ‘factory’, as they are commonly referred to in Kenya. The Kii wet mill is one of three factories managed by the Rungeto Farmers’ Cooperative Society: a large collective organization in Kirinyaga County that counts approximately 1200 smallholder coffee farmers as active members. Kii’s two “sister factories” are also household names in Kenyan specialty coffee: Karimikui and Kiangoi. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eWet processing at Kii factory follows a fairly standard approach across Kenya: after the coffee has been pulped, it undergoes approximately 24 hours of fermentation before being thoroughly washed in clean water and soaked for 12 hours. Before the newly processed “parchment” is transferred to raised beds for drying (usually for a period of approximately 14 days), meticulous care is taken to remove as many defective seeds as possible (floaters), and to grade the coffee by density in washing channels. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThe 2022 harvest represented a return to form in Kenya after a number of challenging years working to source truly stellar Kenyan coffees. With that in mind, we’re excited to once again showcase the classic characteristics we found so enjoyable from the 2022 harvest year: Intense sweetness, mouth-watering acidity, and a complex array of fruit-driven flavors in the cup. Equally as well known is how unique, and often divisive, the flavor profile of these coffees can be.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThe reason for such a polarizing cup lies in the unique plant genetics of the parainema variety, which Eugolio Martinez launched into the spotlight when a selection of it from his farm was submitted to the 2015 Honduran Cup of Excellence and took home the top prize. Before this victory, there was much debate about the mysterious variety, often dubbed “pacaweirdo”, with some who tasted it finding it to be extraordinary and delicious while others judged the coffee to be highly unpleasant, if not defective. In fact, what Eugolio had stumbled upon was a pedigree selection of a Timor Hybrid cross that was the result of national coffee breeding efforts in Honduras some years prior.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eWhile the parainema variety has remained a perennially contentious topic, we at Passenger have always found this unique flavor profile, with its dynamic mix of citrus, tropical fruit flavors, and complex baking spices, to be very intriguing and enjoyable. While El Mirador has been operating under its current ownership structure since 2015, the farm itself has been producing coffee for around 20 years. Since joining together, Kyle and José have continued to invest in El Mirador as a place to experiment with growing new and different varieties and implementing various processing techniques. One such approach, used in the processing of this lot, they refer to as ‘salmuera’: a unique type of lacto-fermentation. After picking and hand sorting cherries for peak ripeness, the whole cherries are fermented in a 2% salt solution (salmuera) for 24 hours before being pulped. After pulping, the parchment is dry fermented for an additional 24 hours before finally being washed and dried on raised beds for around 30 days. The function of the salt solution soak is to greatly reduce the number of undesirable pathogens and bacteria in the fermentation tank, while also creating a hospitable environment for the desirable, (salt-tolerant) bacteria lactobacillus.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eWhether directly attributable to this fermentation method or not, Kyle and José’s efforts have shown beautiful results in terms of cup quality. He chose to enter this unique pacamara from his farm in the 2021 Honduras Cup of Excellence competition and was thrilled to achieve 22nd place as a first-time competitor. When cupping through the COE competition sample set in preparation for the auction, Passenger’s green buying team was immediately intrigued by this lot, with its incredibly bright acidity and unusual flavor profile. It is truly unlike any wet processed pacamara we have ever tasted, reminding us more of some of the best parainema variety lots we have tasted from Santa Barbara in years past.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eOn the nose, we find lime peel, black tea, and a sweet aroma reminiscent of apple cider. This washed AA grade lot from the farm of Dedan Kimathi University in Nyeri, Kenya is still singing with juicy blackcurrant, cola, and key lime flavors accompanied by a rich toffee finish.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThe Dedan Kimathi University of Technology farm (or DeKUT), occupies roughly 650 acres of land dedicated to hands-on agricultural training and horticultural research studies for its students, with coffee occupying the largest part of the farm’s focus. In addition to multiple certificate and degree programs offered by the university in areas related to coffee processing technology, quality management, cupping, and food science, the university farm also cultivates and provides coffee seedlings to area farmers at subsidized prices. The history of coffee farming on the land occupied by the university dates back to the 1920’s when Kenya was still under British colonial rule. It’s fitting then that the DeKUT’s namesake references a storied figure in Kenya’s struggle for independence from Britain during the 20th century. Born in Nyeri in 1920, Dedan Kimathi was a key military leader in the Kenya Land and Freedom Army (also known as the Mau Mau) which staged acts of rebellion against British colonial rule throughout much of the 1950’s.
